Turkey and veg

Nice creamy mushroom sauce and turkey with some sweet potato! Easy! I am a big fan of turkey and chicken therefore I always have some in my freezer, individually packed of course 😉 The good thing about this dish that mushroom, onion and potato are good for a bit longer so you can keep this option for the second half of the week. If you have a busy week you can still make a nice, fresh meal later in 20 minutes. No need for frozen pizza just yet!

Ingredients (for 1):

1 slice turkey steak
4 mushrooms
1 sweet potato
1 small onion
1,5 dl sour cream
1 spoon green pesto

Method:

Our frying pan and small pot are our favourite tools again. (Have nothing else so it’s lucky.) We need to cut the mushroom, onion and sweet potato thin (not paper thin but thin) so they cook fast. Boil some water, add some salt and cook the potato. Check when it’s soft but 15 minutes should be enough. At the same time put the turkey on some olive oil with some salt and pepper and whatever seasoning you have at home. Place the onion around the turkey. Leave it for 3 minutes. When you turn the meat, add the mushroom as well. Wait for 2-3 minutes and add the sour cream and pesto. Check if the meat if it’s cooked just in case before you take it off from the hob. I hope you will like it.
