Chilled Avocado soup is the best choice when it’s very hot outside and you fancy something cold (let’s face it, in London it doesn’t happen very often). Nonetheless, it is a very easy dish to make and you can use up the other half of your avocado when you do avocado based smoothie for the morning. (max 20 min)
Ingredients (for 1):
1/2 avocado
crushed or “lazy” chilli (1 fresh if it’s for 2 or more)
1-2 spring onion
1/2 pint stock (veg)
1 tomato (peeled or tin)
fresh coriander (if you have some)
sour cream or greek style yoghurt (2 spoonful)
salt and pepper
garlic (optional)
+1/2 lime but I leave it out as I find it too strong
For two portions as usual just double it!
Method:
In theory you should fry the onion, garlic and the chilli first. However I leave out the garlic and only use the lazy or crushed chilli so I just put everything in the blender. Easy!
On the picture you can see the portion for 4! I made this for my friend and they loved it. I also make it for 1 quite often, it does work.
